I. Introduction to oil refining process
1. Filtration: remove impurities in crude oil to ensure the smooth progress of the subsequent refining process.
2. Degumming: Use physical, chemical or physicochemical methods to remove soluble impurities such as phospholipids, mucilages, resins, proteins, sugars, and trace metals in crude oil. When the phospholipid content is high, it is easy to foam, smoke, and overflow the pot when heated. Moreover, the phospholipids oxidize at high temperatures, causing the oil to turn brown, which affects the flavor of fried foods. Hydration degumming is a commonly used method. Using the hydrophilic groups contained in lipid molecules such as phospholipids, hot water or dilute acid, alkali, salt and other electrolyte aqueous solutions are added to the oil to cause the colloidal impurities to absorb water, expand and condense. It settles out from the oil and separates from the grease.
3. Deacidification: By adding alkali to neutralize the free fatty acids in the oil, fatty acid salts (soap) and water are generated. The soap absorbs some impurities and settles and separates from the oil, thereby removing free fatty acids and acidity that affect the stability and flavor of the oil. Pigments, sulfides, insoluble impurities and trace metals.
4. Decolorization: Use adsorbents such as clay, aluminum silicate, activated carbon, etc. to remove various pigments, colloids, oxides, etc. in the oil, so that the oil reaches the required color standard.
5. Deodorization: Use vacuum steam deodorization and other methods to remove unwanted odor substances in oil. These odor substances are mainly derived from oil oxidation products.
In addition, depending on the oil type and refining requirements, steps such as dewaxing may be required.
